Jaggery, popularly known as Gur, is a golden-yellow to dark brown in texture, is one of the organic food obtained by concentrating the sugarcane juice as it is available in the form of solid block and in semi-liquid form. Jaggery, the most valued traditional sweetener is very widely used not only in individual households but also in many eateries, restaurants, canteens, hostels and it has certain industrial applications as well. In this health conscious era where healthy food is preferred over normal food, Jaggery plays an important role. It is also called as non-centrifugal sugar. Jaggery has much nutritional and medicinal aspect like its anti-carcinogenic and antitoxic activity. After Pandemic Covid-19, consumers focussed on the use of Jaggery as a component of many of the food and beverages like Chyawanprash and decoctions (Kadha), predominantly used as immunity-boosting sequels. As a traditional sweetener, Jaggery is produced in small units using local machinery in rural areas. Jaggery is produced nearly in 25 countries and India is the largest producer of Jaggery under an unorganised agro-processing sector, sharing more than 60% of the total world production, followed by Colombia (11%). In India, Uttar Pradesh is the major producer of Jaggery followed by Tamil Nadu, Maharashtra and Bihar.

 

Jaggery plays an important role in meeting the sweetener demand of the nation. The demand for Jaggery is steadily growing many folds in the urban, semi-urban and rural areas. Demand for caloric sweeteners as Jaggery is projected to grow by 33 Mt over the outlook period to reach 213 Mt in 2027. There are several applications of Jaggery and almost all Indian households use it on day-to-day basis. Market for Jaggery is round the year whereas its production is only during the sugarcane season and thus factory works for around 6 to 7 months only every year. It has shelf-life of more than couple of months. The rising demand for sweeteners has brought focus on Jaggery, an important cottage industry in economies of the nation for their implications on employment and income. Now the concept of product diversification as Jaggery making may prove another avenue for further increase in farmer’s income besides long term engagement of the migrant labourers.
