Chilli is considered as one of the most important commercial crops and is widely used universal spice, tagged as wonder spice. Chillies are integral ingredient in many different cuisines around the world as it adds pungency, taste, flavour and colour to the dishes. Chillies are excellent source of vitamins A, B, C and E with minerals like molybdenum, manganese, potassium, thiamine and copper. The crop is sown after commencement of the southwest monsoon, i.e., from the first week of August and extending until October. Total crop duration is around four to five months, depending upon varieties cultivated, climate and the soil type. Harvesting is normally carried out manually. After harvesting, arrivals to the market start in February and continue till April after a proper drying under sunlight. In India, major chilli producing states are Andhra Pradesh, Telangana, Karnataka, Madhya Pradesh, Maharashtra, Tamil Nadu, Orissa, Gujarat and North Eastern region. The major chilly growing districts in Andhra Pradesh are Guntur, Krishna and Prakasham.

 

Chilli Powder is the pulverised blend of dried chillies (the primary ingredient) and other complementary spices. The Chilli powder grinding is a very simple process and does not involve any technicalities. After drying Chillies in sunlight, they are graded and ground with the help of pulveriser machine to convert them into powder form. Dried Chillies are cleaned manually to remove impurities like mud or stones before putting them in the pulveriser machine. Chilli Powders are then packed in printed pouches as per the contemplated packing quantities using automatic form, fill and sealing machine. Thus, Chilli Powder project can be easily initiated at a small-scale basis with the setup of Pulveriser machine and Packaging machine.
