Frozen fish is just as good as fresh fish, according to new research. While fresh fish can only last two or three days after harvesting, frozen fish can last four to six months in the freezer and still contain the same health benefits, according to a registered dietitian. Research from Norway is exploring new methods in the way fish are handled, frozen and thawed to provide the best quality of fish round the year. This new development is beneficial for consumers who want to buy more affordable frozen fish while lowering the risk of parasites that can be found in raw fish.

Frozen fish quality is affected by factors such as fish species, stress levels, handling before slaughter and rigor status. The most important factors determining the quality of frozen fish are, however, temperature management during freezing, storage, transportation and thawing. Freezing must be fast and the temperature must be low and constant throughout the process and fluctuations must be avoided during transport and storage. Processing of fish into canned and frozen forms is carried out mostly for exports.
