MANGO PROCESSING PROJECT REPORT

 “The king of the fruits," Mango fruit is very popular with the masses due to its wide range of adaptability, high nutritive value, richness in variety, delicious taste and excellent flavour. India is the largest producer of Mangoes in the world (40%). There are more than thousand mango varieties in India. However, only about 35 varieties are grown on commercial scale. The fruit is consumed in both raw and ripe form. Many taste enrichers are made from unripe mangoes and their shelf life is enhanced either by processing them or by using preservatives. Pickles, chutneys and many sweet preparations like murabba are made from unripe or semi-ripe mangoes. Pulp or juice of ripe mangoes is consumed along with main course. Mangoes are grown all over the country. 

Mangoes are popular amongst all age groups but their availability is limited during season which lasts for a period of 4-5 months only. The demand of fresh mango fruits and processed food items has been showing a decent increase over the years. This estimation is creating a necessity for making more and more processed mango products to cater the growing demand of market. There are good reasons to believe that the processed fruit products will remain a growth industry for a long time, one of the main reasons for expectation of growth is that the consumption of such items are gaining popularity day by day owing to the growing change in the food habits and increased consumption as convenient snack food.
